Ingredients

    0.5 pound lean ground beef
    0.5 cup minced zucchini
    0.5 cup minced onion
    0.5 cup minced carrot
    0.5 cup frozen peas
    0.5 cup frozen corn
    2 tsp minced garlic
    1 can tomato paste
    1 can diced tomatoes

    Italian herbs( Oregano, Basil, Thyme, Rosemary) to taste.

Directions

Mince the fresh zucchini, onion and carrot. Add to non-stick pan with ground beef. . Add minced garlic, frozen peas and corn. Cook until beef is brown. Add tomato paste and diced tomatoes, juice included. Season to taste. Cook 5 minutes more until veggies are tender. Serve with pasta and grated parmesan.
