    1.25 cup All-Bran cereal
    1/3 C Sun Maid raisins (optional)
    1 tsp vanilla extract
    4 T yacon syrup (can substitute honey or agave syrup, but calories and sugar will be higher)
    Stevia equivalent to 1/4 C sugar - can use Splenda or sugar
    1/2 C canned pumpkin
    1 egg
    1/4 C vanilla protein powder (can sub flour instead)
    1 C whole wheat flour
    4 tsp baking powder
    1/2 tsp salt
    1 tsp ground cinnamon (optional)
    1/3 C chopped walnuts (optional)


Preheat oven to 375. Grease bottoms only of muffin tins, or line with paper liners. In large bowl, combine cereal, buttermilk, yacon syrup, vanilla extract, stevia and raisins. Let sit 5 minutes or until cereal is softened. Add in egg and pumpkin, stirring well. Add remaining ingredients, stirring only until well mixed. Spread batter across 15 muffin cups. Bake 20 - 25 minutes until toothpick inserted comes out clean. Makes 15 servings.

NOTE: Calories calculated using all listed ingredients. If raisins, nuts, or cinnamon are omitted, calories will need to be adjusted.
