    It's just red lentils, frozen veggies, chicken stock, an onion and some spices, cooked using coconut oil. I guess it's not technically vegetarian (chicken stock) but it seemed most appropriate! I eat it with crispbread.


- Put 1 cup of lentils and 2 cups of chicken (or other) stock in a saucepan, bring to a boil, then let simmer for about 15-20 minutes.
- In a saucepan, put about 3 T of coconut oil and sautee onion and ripe red cayenne pepper, plus any spices or additional crunchy veggies you want! The recipe I used recommended cumin, turmeric, coriander, and fennel.
- Blend it all together and let it simmer a little more for that nice, dal-ey texture.
