    1lb Rigatoni
    1 small Tomato, chopped
    6 grape Tomatoes, chopped
    8 oz Mozzarella, chunked (small)
    2 tbsp Olive Oil
    1 tsp Oregano, dried
    1 tbsp Parsley, dried
    1 large Scallion, chopped
    Salt & Pepper to taste


1) Cook pasta to liked doneness, drain, put in large mixing bowl.
2) Drizzle pasta with olive oil, salt, pepper, oregano, parsley; mix.
3) Add mozzarella and tomatoes; mix together.

Serving Size: Makes 8 servings of 5oz each.
