    1 cup white flour
    1/2 cup whole wheat flour
    1/2 cup sugar
    2 tablespoons wheat germ
    2 tablespoons chopped walnuts
    2 tablespoons dried cranberries
    1 teaspoon baking soda
    Dash salt

    4 very ripe medium bananas, mashed
    1/3 cup olive oil
    2 tablespoons very strong coffee
    1 egg
    1 teaspoon vanilla extract


Mix first 8 ingredients (dry ingredients) in large bowl. Make a "well" in the center of the dry ingredients and add the next 5 ingredients (wet ingredients) to the "well". Mix together wet ingredients in the "well", then mix wet ingredients with the dry ingredients until just blended. Pour into a greased loaf pan and bake at 350 degree until a toothpick inserted comes out clean (about an hour to an hour and a half).
