Introduction

Exotic and Delicious but don't eat too much, it will cost you. Exotic and Delicious but don't eat too much, it will cost you.
Number of Servings: 5

Ingredients

    4 cups Plantain cubes
    2 cups green peppers
    1/2 cup coconut
    3/4 block of firm tofu
    Curry massala
    Salt

Directions

Toast the plantain in oil, add the green peppers, tofu, curry powder, salt and coconut. Cover with water and simmer till cooked. Serve with brown rice. A complete meal, very satisfying, but don't over do it because the plantain gives a lot of energy!
