    1 lb tilapia rinsed and dried
    1/4 tsp orange peel
    1/4 cup orange juice
    1/4 tsp salt
    1/4 tsp pepper
    1 clove garlic chopped fine


Cook garlic in a frying pan on low-med until soft. Add the orange juice, orange peel, salt and pepper. Simmer for 4-6 minutes until fish is flaky.
