Ingredients

    1 large boneless, skinless chicken breast (cut in 6 pieces) or 2 small breasts (cut in 4 pieces)

    1/8 c. flour
    salt and pepper to taste

    2 tablespoons of peanut oil

    1 can Cream of Chicken Soup
    1/2 can of Chicken Broth

Directions

Coat chicken in flour and fry over medium hot heat in skillet until golden brown. (Crubbies in bottom of pan should be browned good)

Pour off oil but keep enough that you don't lose the crubbies while draining.

Add the can of cream of chicken soup and 1/2 can of the chicken broth to the crubbies in the skillet. Stir or whisk until smooth, Boil for a minute or two.

Serve over your favorite skinny mashed potatoes.

Serving Size: 1 large chicken breast or 2 small chicken breasts cut in 4-6 pieces will feed 2 people .
