Introduction

Ingredients

    2 Chicken Breast, Boneless and Skinless
    1 Yellow Bell Pepper, cut into strips
    1 Red Bell Pepper, cut into strips
    1 Red Onion, cut into strips
    6 tbsp Fat Free Italian Dressing

Directions

Preheat oven to 350

Cut two sheets of foil large enough for chicken and peppers to be wrapped in. Rinse Chicken and Pat Dry with Paper Towel. Place chicken on foil top with Italian Dressing add peppers and onion. Wrap foil around chicken and peppers to create a pocket.

Place foil pockets in the oven for 18-20 minutes or until chicken is cooked through.

  • Tried this with ordinary/white onion and it was really tasty. Just make sure that your pocket is tightly packed - I had mine loose and after 20mins in a fan oven it was barely cooked... I know, I'm a silly buttons - 3/20/09
