Introduction
Quick and easy low carb custard. I've been using on Atkins Inuction (phase 1).Solid little egg custard tart desserts, great on their own (or with fruit when on a higher carb allowance).

Number of Servings: 8
Ingredients

3 Medium Eggs
2 Cups (single or double) Cream
1/4 Cup Granulated Sweetener (Tescos)
2 tsp Vanilla Essence
1/2 tsp salt
Ground Nutmeg and Cinnamon to taste (or sprinkle on top of individual custards)
Directions
Simple -
Mix all ingredients together, making sure eggs are well beaten.
Pour into individual microwavable containers (sprinkle nutmeg and/or cinnamon on top to taste)
Microwave in 750watt microwave for about 1 min or until set.
They can also be poured into individual portions and cooked in the oven in ramekins to give a different consistency. Haven't tried this yet as I can't wait long enough for my 'sweet treat'!
Mixture can be kept in the fridge and poured out and microwaved as and when needed.

This is a good recipe to tweak. Everyone's microwave wattage will differ, so you have to adjust accordingly. Additionally, I don't do artificial sweeteners, so I altered it a bit there. This dessert gave me an excellent place to come up with something fast. Great w raspberries & blueberries. - 11/7/13
