Introduction

Ingredients

16 oz Ground Lamb
16 on lean ground beef
1 large yellow onion - diced fine
1/2 c fine breadcrumbs ( whole wheat or dark rye - lowers Gluten content )
2 oz filtred Cold water
2 lg fresh eggs for binder
1 tbsp Paprika
2 tsp yellow mustard ( grainy Dijon will add sharpness )
4 tbsp Fresh chopped parsley ( of 2 tbsp dried )
1 tbsp fresh ground black pepper
3 lg hard boiled eggs ( peeled & kept whole )
1.5 cu Low Sodium Beef Broth
3 pcs of low sodium Turkey bacon ( diced )
2 tbsp extra light olive oil
Roux: 1/2 c each of soy margarine & flour
1 c organic soy milk
3 oz lemon juice
Directions
In a large bowl, thoroughly mix the ground meats, diced oinion, fine breadcrumbs, cold water & the 2 eggs. Blend in the seasonings of; paprika, mustard, black pepper & parsley. Using a large work surface, flatten out the meat mixture in the shape of a rectangle ( approx 8 x 12 inches ). Arrange the hard boiled eggs ( now cut in half from top to bottom ) in a row thru the centre of your meat mixture. Fold the meat pattie over the eggs & form into a " bread loaf " shape. You will need to rinse your hands frequently in cold water to prevent your mixture from sticking.
Using a pre-heated large iron or stainless steel skillet, sear the meatloaf on all sides, arrange the turkey bacon strips to straddle the top of the loaf. Pop into your pre-heated 375 deg F oven using the middle position rack for 45 minutes. While baking use only as much as needed, in your opinion, of the Low Sodium beef Broth, to baste the loaf. ( I never have to use 100% of the broth ) When done, remove from oven, tent to keep warm & make your Roux sauce.
Roux: Medium size saucepan & low heat! ...pop in soy margarine first, when fully melted add gradually the flour while wisking constantly. When fully cooked out, please add slowly, again with a continual wisking motion, your 1 cup of room temp. organic soy milk. Remove from heat when the roux nicely coats the back of a tablespoon. Blend thru the lemon juice & pour over each, now sliced serving of your Falscher Hase!
