    1 cup frozen corn kernals (birds eye)
    1/2 green bell pepper, diced
    2 tbsp chopped cilantro
    2 tsp balsamic vinegar
    1 tsp minced garlic


Cook corn. Combine all ingredients and toss. Enjoy as a single dish or as a side!
Great with quesadillas!
