Introduction

This salad is not only a color explosion, but a flavor explosion as well. Everyone of my kids adore this salad andask for more. This salad is not only a color explosion, but a flavor explosion as well. Everyone of my kids adore this salad andask for more.
Number of Servings: 12

Ingredients

    1 cup quinoa, cooked
    1 drained and rinsed can of corn
    3/4 c. diced red onion
    2 oz. roasted red peppers, diced
    1/2 c. diced celery (inner, tender stalks)
    5 radished sliced
    2 c. shelled edamame
    1/2 c. chopped, fresh cilantro

    Dressing:
    4 Tbsp lime juice
    1 garlic clove, minced (more if you like it!)
    2 Tbsp. olive oil
    salt or Mrs. Dash to taste

    NOTE:
    Can top with crumbled feta and/or minced jalapenos for some additional flavor

Directions

Mix all ingredients together in a large bowl. Whisk dressing ingredients together and toss with salad.

Serving Size: makes 8 good sized servings
