Introduction

Ingredients

1 eggplant, peeled
2 large tomatoes, sliced
1/3 cup shredded cheese (any kind will do, I use Mexican blend)
1 tbsp extra virgin olive oil
salt
pepper
Directions
Peel eggplant, slice width wise. Lightly brush olive oil on each side and add salt and pepper too.
Cook 8-10 minutes in the oven at 425 degrees. Flip them over, cook another 8-10 minutes.
Top each slice with a slice of tomato and a small scoop of shredded cheese. Return pan to oven and cook another 5-6 minutes until cheese has melted.
Serving Size: Serves 2
