Introduction

a twist on the all time favorite a twist on the all time favorite
Number of Servings: 8

Ingredients

    1 lb elbow pasta
    3 tbs butter
    3 tbs wondra flour
    2 1/2 cup non fat milk
    1 cup shredded cheddar
    3 oz goat cheese
    pinch of nutmeg
    oil
    1 red pepper diced
    1 med red onion chopped
    2 stalks celery diced
    2 scallions chopped
    2 cans of crab meat
    1 tbs old bay seasoning
    pinch of thyme, dill, salt and pepper
    6 saltines
    arugula

Directions

boil water and cook pasta for only 3 to 4 mins drain and set aside.
next saute veggies for about 6 to 8 mins then add crab and old bay and other seasonings except nutmeg and remove from heat.
Next melt butter add flour and whisk for 1 min add milk and cook over med heat for about 3 to 5 min add cheeses and nutmeg until cheeses melted and thickened.
Now add pasta and crab mixture and either place in indivual dishes or in 1 large bowl top with crushed up saltines and diced arugula and bake in a preheated 375 oven for 12 mins.
Optional and not included in calories you may want to shred an additional 11/4 cup of cheddar to place on top or just save some from cheese sauce to keep the same calorie info
