Ingredients

    4 eggs
    1/4 cup splenda
    1 teaspoon vanilla extract
    1 teaspoon baking powder
    1/2 teaspoon ground cinnamon
    1/2 cup unsweetened apple sauce
    2 cups Fibre one cereals crushed
    3 tablespoons ground flaxseeds
    1/2 cup soy milk unsweetened (or regular no fat milk)

Directions

In a bowl, mix the cereals, flaxseeds, baking powder, soy milk and apple sauce and let sit for 15 mins.

Preheat the oven at 400 degrees.

In another bowl, beat the eggs and add the vanilla extract, the splenda and the cinnamon.

Mix the two mixtures together.

Put in greased muffin pans or covered with paper liners.

Cook for 25 min.

Makes 11 muffins.
