Introduction

Ingredients

    1 large can of whole, peeled tomatoes (no salt added, if using regular tomatoes, omit salt in this recipe)
    1/4 tsp salt
    2 colves garlic
    1/2 tsp Italian seasoning
    15 fresh basil leaves
    1 1/2 T olive oil, separated
    2 fresh roma tomatoes
    1/4 c chopped onion
    1/4 tsp black pepper

Directions

Preheat oven to 350 degrees. Dice roma tomatoes into 1-2" chunks, dice garlic into large chunks (about 8 per cloves). In 1 Tof olive oil, spread diced tomatoes, garlic, and basil leaves on a baking sheet. Roast for 30-40 minutes, tossing once halfway through.

Meanwhile, add chopped onion and 1/2 T olive oil to sauce pan. Sweat the onions, then add canned tomatoes, salt, Italian seasoning, and pepper. Break up tomatoes as best you can...I used an immersion blender to make the whole soup a bit creamier. While the tomatoes continue to roast, let the soup simmer and reduce a bit. When the tomatoes are done roasting, add them to the soup and turn off the heat. Enjoy!!
