Ingredients

2 Chicken Breast (skin removed)
2 whole eggs
50g of plain/all purpose flour
25g unsalted butter (room temperature)
4 cloves of garlic
50g of golden/homemade bread crumb
Directions
1. pre-heat oven to 180 degrees centigrade/356F/gas mark 4. Cut a slit in the middle of the breast right through to the bottom making sure it does not go all the way through the breast.
2. In a food processor blend the butter and crushed garlic to create a garlic butter. once the garlic and butter are combined add the parsley and blitz again.
3.remove the butter mix from the processor and push inside the gap you created in the chicken breast.
4. now the vital part. put the flour, eggs and breadcrumb in three seperate bowls and then beat the eggs.
5. one at a time cover each breast in flour then dip in the egg the in the bread crumb and repeat in that order excluding the flour once more.
then place on a non-stick baking tray and cook for roughly 35 minutes and serve with mashed potato and any veg.
