Number of Servings: 10

Ingredients

    1 can black beans (rinsed and drained)
    1 can corn (drained)
    1 can diced tomatoes (I use Rotel with chiles) - drained
    2 T chopped red onion
    2 T white wine vinegar
    1 teas olive oil
    1 T cilantro
    1 teas chipotle chili powder
    1/4 teas salt

Directions

Mix all ingredients and store in refrigerator for at least two hours prior to serving.

Serve with baked chips or crackers - also great on chicken or on a salad!
