Great way to use your garden zucchini. Recipe can be frozen after baking. Great way to use your garden zucchini. Recipe can be frozen after baking.
Number of Servings: 12


    2 large zucchini or yellow squash, about 12 in long
    4 tsp olive oil
    1/2 c chopped onion
    1 green pepper, finely chopped
    2 T finely minced garlic
    1 lb lean ground beef
    12 oz ground turkey
    2 c Classico Tomato & Basil Sauce
    2 c part-skim mozzarella cheese, grated


Preheat oven to 350. Chop onion & green pepper. Heat 2 tsp olive oil in nonstick pan. Add onions & pepper. Saute until soft. Add minced garlic and saute 1 min. Remove from pan. Add 2 tsp oil to pan and add ground beef & ground turkey. Brown. Remove extra fat from pan. Add cooked veg and tomato sauce and simmer until thickened.
Cut zucchini into 2 in thick slices. Scoop out center from each slice. Spray baking sheet with nonstick spray or use parchment paper and stand zucchini cups. Stir in 1/2 cup of grated cheese into cooled meat mixture.
Stuff each cup pressing mixture into cup. Mound on top.
Bake zucchini for 20-40 min depending on the thickness of the rounds. Check for doneness by inserting a knife into zucchini. Remove from oven and top each with remaining cheese. Return to oven for 10-15 min until cheese is melted on top.
