Introduction
Quick and easy, pizza for one with lots of veggies. YOu could add other fresh veggies of your choice, such as thin sliced green onions or scallions, thin sliced ripe tomatoes in place of sauce, added herbs. I left off black olives due to sodium. Ingredients

One Arnolds sandwich round, not separated, toasted.
1/8 cup or 2 TBSP of pizza or spicey pasta sauce
or 3 or 4 thin slices of ripe tomato plus fresh or dried herbs of choice (this will reduce sodium and any sugar)
1/4 cup diced green sweet pepper
1/4 cup diced red sweet pepper
1 large thick slice onion, diced
1/4 cup fresh sliced mushrooms (any variety)
1/4 cup fat free shredded mozzarella cheese
Directions
Lightly toast sandwich round, Put toasted round on baking sheet or grill pan and spread with sauce or lay tomato slices on top. Add diced raw veggies on top of sauce. Bake in oven or toaster oven for 10 to 15 minutes in pre-heated oven at 375 F . Be sure to pre heat oven. When time is up, top with shredded cheese and return to oven for 2 - 3 minutes to melt cheese. If raw veggies are available, it will take about 3 minutes to assemble or about 15 minutes to assemble if veggies need chopped. Total time about 18 to 30 minutes. Easy to do more than one at a time, so several people can enjoy this treat. Add spiced seasoned diced chicken or turkey or very lean beef or venison to make this a meal. Meat is not included in the calorie count.
