Number of Servings: 6


    1 pound ground turkey
    1/4 cup Panko crumbs
    1/2 cup finely chopped onion
    1/4 cup finely chopped green bell pepper
    1 fresh tomato, finely chopped
    1/2 tsp salt
    1/4 tsp black pepper
    1 tbsp parsley
    1/4 tsp oregano
    1/4 tsp thyme
    4 tbsp ketchup

    3 tbsp ketchup
    1 tbsp brown sugar
    1 to 2 tsps yellow mustard


Meatloaf: Combine all ingredients together and place about a 1/4 cup of the mixture into muffin tins Makes about a dozen.

Topping:: Combine topping ingredients and put about a teaspoon or so over each "muffin"

Bake at 350 degrees for about 30 to 35 minutes or until done.

Serving Size: makes 6 servings ( 2 muffins per serving)
