Introduction

Number of Servings: 6

Ingredients

    1 cups pinto beans
    lb. stew meat or buffalo browned
    1 tsp. salt
    1 tsp. fresh cracked pepper
    6 cloves garlic chunked
    1 medium onion chopped
    2 Aneheim peppers roasted and chopped
    2 red Jalepeno peppers roasted and chopped
    1 Poblano roasted and chopped
    2 tbs. Ancho chile powder
    1 tsp. cayenne
    1 tbs. Epazote
    2 oz. franks red hot sauce
    1 tsp. ground cumin
    1 handful fresh chopped sage
    2 sprigs fresh chopped rosemary
    2 cans diced tomatoes

    Use Masa flour to brown the meat in and to thicken if necessary


Directions

Cook beans until soft before adding tomatoes or they will remain tough.
Add everything but tomatoes to cooked and rinsed beans, plus water to cover simmer until tender add tomatoes slow cook 2 hours serve with homemade cornbread.

NOTE: add 2tbs baking soda to bean water bring to a boil turn off heat cover and soak 1 hour, drain twice and finish cooking.
