Introduction
This is the coffee cake I made every sunday growing up as a kid--REALLY delicious, but also not the healthiest. I will be coming out with a leaner version soon, but wanted to post this for 'posterity.' -
1 c. Sugar
2 c. Flour
1 c. Milk
1/2 c. Shortening
1 Tbsp. Cinnamon
1 egg
2 tsp baking powder
Pinch of Salt
Directions
In mixing bowl, combine shortening, cinnamon, sugar and 1 c. of flour. This will wind up being crumbly chunks--careful not to overmix. Set aside 1 cup of mixture.
To remaining crumble, combine rest of ingredients and mix until smooth. Pour batter into a GREASED (i use crisco) 8"x8" pan. Sprinkle crumble mixture on top.
Bake at 350 for 30 minutes or until done (test w/ fork)
*at altitude this recipe takes only 30 minutes, at sea level this usually takes me 45 minutes to get thoroughly done inside.
