I created this delicious and light salad after discovering to my dismay that the lettuce I had intended to make a salad with had gone bad. This turned out to be a great alternative. Number of Servings: 4

Ingredients

    2 medium stalks of celery
    1 cup cucumber (with peel)
    10 baby carrots
    5 medium mushrooms
    1 medium red tomato
    4 tbsp fat free balsamic vinaigrette dressing

Directions

Slice all vegetables and place in a bowl, add dressing, toss together and enjoy!!!!
