    8 egg whites
    1 egg yolks
    Package 10 oz red yellow peppers and onions frozen
    One medium potato
    Fat free cheddar cheese


Brown O'Brien potatoes in a small non-stick skillet

break 10 eggs in bowl and remove 8 yolks

Thaw drain and let vegetables dry on cloth Pre cook in non-stick skillet with cooking spray

beat eggs and pour into hot non stick skillet, sprayed with cooking spray

add potatoes vegetables and peppers, ham and peppers and onions

reduce heat and allow to cook covered through out
as base is cooked turn on broiler and add cheese and any remaining vegetables to top

Place pan in oven under broiler and cook top.
watch carefully so it doesn't burn
cover handle of pan with aluminum foil
remove when done

slice and serve

Serving Size: six slices
