Introduction

Mini pot pies for vegetarians or meat eaters. My husbands loves him some meat and me not so much. This recipe was easily tweakable to give us both what we wanted out of a meal. Mini pot pies for vegetarians or meat eaters. My husbands loves him some meat and me not so much. This recipe was easily tweakable to give us both what we wanted out of a meal.

Ingredients

    1 can of campbells cream of potato condensed soup (10 3/4 ounce can)
    1/3 cup of milk
    1 bag of mixed frozen veggies (i use birds eye steamers mixed veggies)
    1 can of pillsbury grands homestyle buttermilk biscuits (i use the small 5buscuit can since theres only two of us)
    2 morning star original chicken patties or if you have my issue and need to make half of the recipe for a meat eater i use 1 morning star patty and one small can of hormels chicken

Directions

preheat oven to 375*
cut biscuits in half and place each half circle into a greased muffin pan cup.
mix soup, milk, veggies (season to taste..i like to use sea salt, black pepper and garlic powder)
cook patty as directed on box and add to veggie/soup mixture.
(i usually split the veggie/soup mixture in half and in half add my patty and the other half add his canned chicked)
evenly distribute the veggie/soup/chicken mixture among biscuit halves.
place in preheated oven and bake for 15min or until the biscuits are golden brown.
cool, eat and enjoy!
