    3 cups whole wheat flour
    1 Tbsp instant yeast
    1/4 cup Extra Virgin Olive Oil
    3/4 cup water, very lukewarm [about 120F]


Place 2 cups of the flour and the yeast in a medium bowl and mix the yeast into the flour.

Add the olive oil to the lukewarm water and pour into the flour mixture.

Mix with your hands or other method, until the liquid and flour is absorbed. Add more flour, gradually until the dough is no longer sticky and is quite stiff, kneading the dough until it is smooth and elastic.
[This is usually the entire remaining cup, but it can vary somewhat. I move the dough from the bowl and put flour on the counter and add additional flour while kneading the dough.

Spray the bowl lightly with oil or cooking spray [not included in the calorie count]. Cover with plastic or a kitchen towel and let rise until double in size, about 30 - 40 minutes, depending on the warmth of your kitchen.

Preheat the oven to 500F.

Divide the dough and roll out to desired thickness.

Top with pizza sauce and topping and bake 5 [Thin crust] - 7 [medium crust] minutes for a cheese pizza, or 7-10 minutes for a loaded pizza.
