Introduction

This is a simple recipe. You can use less sugar more tartness either way it is good. The calories are high for one cookie but it makes up for it in healthiness and flavor. I love lemon but you can use any citrus fruit you like. Play around and find what you like. This is a simple recipe. You can use less sugar more tartness either way it is good. Ingredients

    3 egg whites
    1 tsp vanilla flavoring (I use imitation)
    Zest of 1 Fresh Lemon
    Juice of 1 Fresh lemon
    2 1/2 cups Powdered Sugar
    Butter and flour for cookie sheet only

Directions

Butter and flour a cookie or baking sheet. Wash all oil off of hands. Preheat oven to 200 degrees. In a clean glass mixing bowl. Separate egg whites from the yolk. Save the yolk for another use. Zest fresh lemon into the bowl with the egg whites. Roll lemon to get ready for juicing and cut in half. Squeeze lemon juice into bowl being careful not to drop the seeds in. Add vanilla. With an electric mixer set on high start whipping the egg whites. When they start to get foamy start adding powdered sugar 1 Tbsp at a time. When all is added in, continue mixing on high until stiff peaks appear. A stiff peak will be when you stop the mixer and pull it out of the egg whites and they remain standing. Drop by Tablespoonfuls onto a prepared cookie sheet. Bake for 3 hours or until the meringues look dry. It is good to check every hour. Let meringues cool completely before storing in an airtight container.

NOTE: If you use a teaspoon to drop onto cookie sheet you can get smaller but more cookies.
