    1 large egg, lightly beaten
    1 10oz package frozen spinach, thawed and drained
    1/4 cup crumbled feta cheese
    2 green onions, chopped
    1/4 tsp salt
    1/2 tsp black pepper
    1/4 tsp nutmeg
    1/2 roll of phyllo sheets
    Butter-flavored cooking spray
    10 oz. hunts diced tomatoes w/ basil, garlic,oregano
    1 lb. boneless skinless chicken breast, sliced


spritz a 8x8 baking dish with cooking spray. Take a roll of phyllo sheets and cut in half. Take one half out and reroll the remainder. Line the bottom of your baking dish with half the sheets and spritz with spray. Mix the first seven ingredients and cover the bottom of dish with about half the mix. Then layer half the tomatoes, then the chicken, another layer of mixture and tomato. Top with remaining phyllo and spritz top. Back at 350F for 55 - 60 min. Let stand for 10 - 15 mn before cutting. yield: 6 servings.
