Ingredients

4 lbs (roughly 4 medium) sweet potatoes
1 medium golden delicious apple
1 medium pear
2 tbsp Promises fat free margarine
1 tbsp Splenda brown
1 tbsp Splenda
1 tbsp cinnamon
1/2 tsp nutmeg
salt and pepper to taste
1 cup minature marshmallows
Directions
1. In a large pot, boil the sweet potatoes until tender, about 1 hour. While waiting, slice apple and pear into thin, angled slices; set aside.
2. Drain sweet potatoes and let cool. Peel. In a large oven-safe bowl, mash sweet potatoes and add margarine, cinnamon, nutmeg, salt and pepper. Bake at 350 for 15-20 minutes or until top is golden brown.
3. Spread apple and pear slices on a foil-lined baking sheet. Sprinkle with white Splenda. Bake for 10 minutes or until fruit is tender and Splenda is carmalized.
4. Transfer sweet potatoes to a medium microwave-safe bowl. Starting from outer edge, sprinkle a small circle of marshmallows, then a cirlcle of alternating fruit slices, and put any remaining fruit in middle. Sprinkle top with Splenda brown. Microwave for 5 minutes or until marshmallows begin to melt.
