    Whole Wheat Fettuccine, 8 oz
    Jenni-O Turkey Sausage, 8 oz
    Canola Oil, 2 tsp
    Mushrooms, fresh, 2 cup, pieces or slices
    Onions, raw, 1 small
    Garlic, 3 clove
    Beans, great northern, 2 cup (drained and rinsed if canned)
    Chicken Broth or Bouillon, 1 cup
    Arugula, 4 cup
    Red Ripe Tomatoes, 1 cup, chopped
    Pepper, black, .25 tsp


Cook fettuccine according to package instructions.

Meanwhile, spray a large nonstick skillet with spray and set over medium high heat. Add sausage and cook until browned, stirring with a spoon to break up the pieces, 3-4 minutes. Transfer to a large plate.

Heat the oil in the same skillet over medium heat. Add the mushrooms, onion, and garlic; cook, stirring frequently, until golden brown, 7-10 minutes. Add the beans, broth, arugula, and sausage; bring to a boil. Reduce heat and simmer, covered, until the sausage is cooked through, 3-4 minutes. Add the tomatoes, basil, and pepper; cook through just until heated through, about 2 minutes. Toss with the fettuccine and serve at once.

Serving Size: scant 1 cup of sauce and 2/3 cup fettucinne
