    5 large chicken breasts
    1 single serve Crystal Light Lemonade Mix
    1 tbsp onion flakes or 3 tbsp fresh chopped onion
    1 tbsp minced ginger or 2 tsp dried
    1/2 cup water
    1 lemon, juiced & sliced (reserve juice)
    2 tbsp cornstarch
    2 tsp Splenda


Juice the lemon and set juice aside. Cut remaining lemon into slices. Coat chicken with onion, ginger, and Crystal Light mix and place in crockpot. Pour water over chicken and top with fresh lemon slices. Cook on low for 4-6 hours.

Remove chicken and set aside. Pour cooking juices into a saucepan and bring to a low simmer on the stove top. Make a rue with the cornstarch (put in a small bowl and add 2 tbsp of water and stir until it's a paste). Stir cornstarch rue into simmering cooking juices and whisk until it becomes a thickened sauce. Stir in the fresh lemon juice and the splenda. Pour over the chicken and toss to coat.

Serve over rice.
