    8 large eggs
    6 egg whites
    1 package frozen spinach
    1 small onion, chopped
    1 green pepper, chopped
    3 oz part skim mozzarella cheese
    2 oz feta cheese
    2 oz grated parmesan cheese,
    2 oz half & half Cream,
    1 tbsp Butter
    3 cooked slices of reduced fat bcon


Inspired by Rachelmac's quiche recipe!

Sautee chopped onions and green peppers in butter until translucent. Then, add defrosted, rinsed, and dried spinach.

Beat eggs and cream, then add cooked spinach/onion/pepper/tomato mixture. Add cheddar cheese and mix. Pour into muffin tins. Sprinkle parmesan/feta mixture on top and a little cayenne pepper and salt to taste. Cook in 350* oven for 20 minutes, until cooked through.

Serving Size: Makes 7 2-muffin servings
