Ingredients

Jennie O Italian Turkey Sausage
1 TB Extra Virgin Olive Oil
1 tsp Minced Garlic
1/2 Purple Onion
2C sliced Mushrooms
Red Bell Pepper
Orange Bell Pepper
Yellow Bell Pepper
16 oz pkg of frozen Cheese Tortellini
Directions
1. Put a large saucepan on low to medium low heat with 1 TB EVOO, and 1 tsp minced garlic.
2. Put a large pot onto boil for the tortellini.
2. Slice the turkey sausage into chunks/slices. As you do, remove the casing. Add the turkey sausage to an already heated up pan. Cook all the pieces of turkey sausage until no longer pink. Drain when done cooking.
3. While sausage is cooking, slice the peppers, mushrooms (if not already sliced) and onion. Slices should be 1/2 to 3/4 inch thick for the peppers, and onions.
4. Add the veggies, and sautee for 6 - 8 minutes, then cover for an additional 5-7 minutes.
5. When the water for the tortellini has come to a slow boil, add the tortellini and cook according to pkg directions. Drain when done cooking but DO NOT rinse. Return the tortellini to the large pot. Remove pot from heat.
6. Take the veggie/sausage mix off the heat and dump into the pot with the tortellini. Mix the two gently together.
Enjoy!! Makes great leftovers for lunch! Very hearty, and filling meal!
