Number of Servings: 12


    2 cups whole wheat flour
    0.5 cup sugar or splenda (calories calculated for Splenda)
    1 tbsp baking powder
    0.5 tsp salt
    0.5 tsp cinnamon
    2 eggs
    1 cup strawberry yogurt
    0.25 cups buttermilk
    0.25 cup melted butter
    1 cup blueberries (optional)
    Handful of Walnuts (optional)


Preheat oven to 400 degrees.
Coat 12-cup muffin pan with cooking spray.
Combine dry ingredients.
Whisk together eggs, yogurt, buttermilk, and butter.
Add to flour mixture until just blended.
Mix in blueberries and walnuts.
Spoon into prepared muffin pan.
Bake 15-20 mins.

Serving Size: Each batch will fill a 12-cup miffin pan for 12 servings
