Introduction
Just using up the dark meat from the Thanksgiving turkey. Just using up the dark meat from the Thanksgiving turkey.Number of Servings: 9
Ingredients

2 Cups shredded dark turkey meat
1/2 C chopped onion
1 C cooked pinto beans
1 Taco or Burrito seasoning packet
9 flour tortillas
1/2 C shredded cheddar cheese
1 Can enchilada sauce
Directions
Prepare seasoning packet as directed. Saute onions in the prepared seasoning until translucent, add the turkey, beans and onions until warmed. Preheat the tortillas. Place 1/3 C of mixture on each tortilla, top with a sprinkle of cheddar. Roll up and place in a baking dish. Cover with the enchilada sauce and sprinkle with any remaining cheese. Bake for 20 minutes until heated through. Makes 9 servings.
