    6 cups Turkey broth (made from turkey carcass, water, onions, celery, sage - boiled, refrigerated for couple hours or over night, and fat removed) OR low sodium organic chicken broth
    6 ounces diced turkey, dark meat
    4 ouces diced carrots
    2 large stalks of celery, diced
    2 cup onion, diced
    1 tsp olive oil
    1 tbsp oregano, dried
    1 tsp thyme, dried
    3/4 cup black beans, drained and rinsed well


Simmer turkey carcass with 1 cup of diced onion for a couple hours. Strain out all solids. Cool and run broth thru fat strainer or let chill in refrigerator and skim off fat. Should have about 6 - 8 cups of broth. Saute in a nonstick pan with 1 tsp of olive oil: carrots, onions, and celery until slightly cooked. Add to soup pot. Add spices, diced turkey and beans to soup pot. Simmer for a couple hours. Prepare shirataki noodles per directions and add to soup about 15 minutes prior to eating.
