    1 1/2 cups yellow cornmeal
    1/2 cup unsweetened almond or rice milk
    1/4 cup water
    1 tbsp date honey (see notes)
    1 tbsp olive oil
    3/4 cup corn kernels
    1/4 cup chopped spring onions (just the green parts)
    1/2 tsp salt


Preheat oven to 400 f (200 c)

Mix cornmeal, almond milk, water, date honey and oil in a medium bowl. Stir well, until combined.

Add corn, onions and salt, mix well.

Lightly rub a muffin tin with oil. Fill cups about 3/4 full and bake for about 20 minutes.

Date Honey is made by simmering 1 cup of chopped dried dates in 1 cup of water for 50 - 60 minutes, then blending or blitzing in a processor.

You could use chives instead of spring onions.

Excellent with chilli or soup.
