Introduction

Ingredients

Dry Ingredients:
2/3 cup all-purpose flour
1 1/3 cup whole wheat flour
2 tsp baking powder
Wet ingredients:
1 egg
1 c skim milk
2 tbsp oil
Directions
Preheat oven to 400'F
Sift dry ingredients together. In a separate bowl, whisk the wet ingredients together. Pour into the dry ingredients and stir until everything is mixed together. Be careful not to overmix! Over-mixing leads to tough muffins.
Spray muffin tins with non-stick spray, or alternatively, use cupcake wrappers. Spoon the batter into prepared muffin tins until they're about 7/8 full.
Cook 20-25 minutes, or until the muffins are just browned on top.
Serving Size: Makes 14 muffins
