    2 lbs. lean ground beef
    1 lb. lean ground pork
    1 pinch cayenne pepper
    2 tsps. paprika
    1 large head of cabbage
2 cups uncooked Uncle Ben's rice
    1 large onion minced
3 cups sauerkraut rinsed and drained
    1 can tomato juice
    2 large eggs
    3 tbsp. olive oil
    salt and pepper to taste

In a large bowl, mix together the ground pork, ground beef, rice, spices and eggs. Set aside.

Core the cabbage and place in a large pot of boiling water. Remove the leaves as they soften and cut out the hard vein.

Place some of the meat mixture on the cabbage leaf and roll up, tucking in the ends. Place neatly into a baking dish or roast pan. Sprinkle generously with sauerkraut . When the second layer is complete, top with remaining sauerkraut. Drizzle with 3 tbsp. olive oil. Add equal amounts of tomato juice and water. Cover with left over cabbage leaves.

Bake in 350 degree oven for approximately 4 to 5 hours. Additional liquid may be required (tomato juice and water).

Serve with crusty rolls and a tossed salad.

Makes 24 to 36 cabbage rolls.
