Introduction

An interesting twist on breakfast, and a good way to jump-start some fruit into the kids! An interesting twist on breakfast, and a good way to jump-start some fruit into the kids!

Ingredients

    1 cup Bisquick
    ¼ cup pineapple juice
    ¼ cup milk
    12 pineapple chunks
    1 tsp cane sugar
    1/3 cup shredded sweetened coconut

Directions

Mash the pineapple chunks with a fork, and combine all ingredients except coconut.
Spoon about batter onto a hot greased pan.
Top with some shredded coconut and spread about 1 tbsp batter over coconut.
Flip and brown second side. Repeat for rest of batter.
