    1 lg or 2 small onions, chopped
    3 cloves or 1 Tbsp garlic minced
    1 Tbsp low fat butter with canola oil
    1 bunch broccoli, chopped
    32 oz. Fat Free Low Sodium Chicken or Vegetable Broth
    1 cup diced potatoes (or frozen hash brown potatoes)
    1/2 tsp salt
    1/4-1/2 tsp of ground mace
    1 c. fat free milk
    2 heaping tsp. all-purpose flour
    1 c. shredded reduced fat cheddar cheese


Saute onions in butter until translucent. Add minced garlic and saute for one minute more. Add broth and broccoli. Bring to boil, then simmer for about 10 minutes. Add the potatoes. They add starch and will help thicken the soup. Simmer until the vegetables are soft. Remove from heat and blend with a wand blender until smooth. Return to heat. In a jar with a lid, add two tsp. flour to the milk and shake vigorously to prevent lumps. Pour into the soup. Add the cheese and heat until melted and warm. Serve and enjoy! Can top with fresh parsley or more cheese.
