Introduction

An unusual, yet very tender sweet cake made rich with spices and raisins, and healthy with whole-wheat flour. Will not be able to tell the turnip's in there! Number of Servings: 12

Ingredients

    2 ½ cups whole wheat flour
    ¼ tsp salt
    2 tsp cinnamon
    1 tsp nutmeg
    ¼ tsp cloves
    ½ cup margarine
    1 cup packed brown sugar
    2 tsp baking soda
    1 cup buttermilk
    1 cup mashed turnip, cold
    1 cup raisins

Directions

Preheat oven to 350F. Grease and flour a 13 x 9” pan.
Combine dry ingredients in a medium bowl.
Cream margarine and sugar.
Combine baking soda with buttermilk, and add to the creamed mixture. Blend well.
Mix in the turnip and raisins.
Add flour mixture to the turnip mixture and blend very well.
Scrape into pan and bake 40 minutes.
Cool completely in pan before turning out and sifting icing sugar over cake to serve.
