Number of Servings: 4


    2 chicken breast halves, chopped coarsely
    1 cup fresh mushrooms, sliced
    1 medium sweet red pepper, chopped
    1 cup onion, chopped
    1 cup zucchini, chopped
    1 can diced tomatoes with green chilies
    2 garlic cloves, minced
    4 teaspoons olive oil, divided
    1-2 teaspoons Italian seasoning (to taste)


1. In a large skillet, heat 2 teaspoons olive oil. Add the chicken and saute until chicken is no longer pink.

2. Add the zucchini and garlic, saute until the zucchini just starts to get soft.

3. Add the mushrooms, peppers and onion. Saute until they are tender.

4. Add the tomatoes and Italian seasoning. Cook for another 8-10 minutes, until most of the liquid has evaporated but not all of it.

5. Serve over rice or over polenta or corn hoecakes.
