Introduction
This is an easy Indian Dhal recipe. The great thing is, you can add pretty much any vegetables you have on hand. It is also great on its own, over rice or as a soup (simply add some vegetable or chicken stock). You can use red, yellow, green or brown lentils for this recipe. This is an easy Indian Dhal recipe. Ingredients

1 1/4 cup Lentils, dried (approx. 1/2 of a 16oz. Bag)
1 c. Onions, chopped
1/2 tsp. Black pepper
1 tsp. Turmeric
1 tsp. Ginger paste
4 tsp. Garlic paste
1 1/2 c. Cauliflower, chopped
1 c. Green beans, fresh
1 can. Tomatoes, diced, undrained (approx. 1 3/4 c.)
1 tsp. Cilantro, dried or 1 Tbsp. fresh
2 Tbsp. Sour cream, fat free
Directions
Heat onion, ginger, cumin, turmeric, pepper and garlic in a pan with approximately 1/8 of an inch of water. Simmer for 2 minutes. Add cauliflower, green beans and tomatoes with juice from can. Simmer for 1 minute. Add water and lentils. Bring to a boil. Cover, reduce heat and simmer for 35-40 minutes or until lentils are tender. Stir in cilantro and sour cream.
