Ingredients

    1 cup flour (I use half and half white and whole wheat)
    1 tsp baking powder
    1/2 tsp baking soda
    1 cup milk (recipe calculated for skim milk but any milk or yogurt works fine)
    1 egg
    1 Tbsp oil

    Optional: add berries, apple or banana slices or any other fruit (not calculated in recipe)

Directions

Combine dry ingredients and wet ingredients separately. Add wet ingredients to dry ingredients all at once. Combine until moistened but may still be lumpy. Add fruit if using. Spray griddle with cooking spray and make pancakes using 1/3 cup to 2/3 cup measure.

Makes 4 large or 8 small pancakes.
