    For Meatballs
    1 pound ground pork Sirloin
    1 pound ground turkey breast
    28 oz frozen spinach (can also use 20oz) thawed
    1/3 cup plain dried breadcrumbs
    2 large egg whites
    coarse salt& Pepper (optional & to taste)
    nonstick cooking spray

    For the Sauce:
    2 tsp extra-virgin olive oil
    1 small yellow onion, diced small
    3 garlic cloves - coarsely chopped
    2 cans crushed tomatoes (28oz each)
    1/4 cup Sriracha Sauce
    1/2 cup fresh parsley leaves (roughly chopped for garnish)


Heat broiler, with rack in top position. Place all ingredients to make meatballs into a large bowl. with your hands, mix to combine, roll into forty 1 inch balls. Arrange on a rimmed baking sheet. Lightly coat with cooking spray. Broil until golden brown (10 minutes) rotating sheet halfway through.

In a large heavy pot, heat oil over medium, add onion and garlic and cook stirring occasionally until onion is translucent (6 minutes)
Add tomatoes and Sriracha and bring to a simmer. Add meatballs and simmer for 10 minutes (to store, let cool completely then refrigerate in a airtight container up to 1 week or freeze up to 3 months.

Cook favorite pasta as directed (pasta not included in calorie count of this recipe)

Serve over pasta or as a meatball sandwich but remember to calculate the additional calories. Enjoy
