zucchini, yellow squash, onion, carrots, yellow peppers, white potatoes, green beans, fire roasted tomatoes, coconut milk (lite), red curry, turmeric, water, bouillon cube, cayenne pepper to taste

Chop all fresh vegetables into about 1/2 inch thick chunks. Put everything into a large crock pot and put on high for about 30 minutes and then turn to low and simmer for about 5-6 hours.
