Lots of veggies, some lite coconut milk and red curry powder. Lots of veggies, some lite coconut milk and red curry powder.

    zucchini, yellow squash, onion, carrots, yellow peppers, white potatoes, green beans, fire roasted tomatoes, coconut milk (lite), red curry, turmeric, water, bouillon cube, cayenne pepper to taste


Chop all fresh vegetables into about 1/2 inch thick chunks. Put everything into a large crock pot and put on high for about 30 minutes and then turn to low and simmer for about 5-6 hours. Serve on top of coconut rice. If it's too spicy for personal taste, add a little lite yogurt or sour cream to your individual bowl.
