    6 cups homemade chicken stock
    3 large eggs
    1/4 cup freshly chopped flat leaf parsley
    Pinch of nutmeg
    Kosher salt & black pepper to taste


Brink stock to a boil in a large saucepan, then reduce the heat and simmer. In a large bowl, beat the eggs with Parmesan, parsley, and nutmeg with a fork. Add the egg mixture to the broth in a steady stream, stirring vigorously with the fork to break up the egg, which will form fine, light flakes. Season with salt and pepper.
